First, we start by sprouting barley to allow Mother Nature to create enzymes that break starches into sugars and then gently dry the seed to preserve its magic. A 0.5% – 1% inclusion will awaken yeast, activate fermentation, and crown your crusts with golden browning, deeper Maillard flavors, and make a noticeable difference in every bake.
