Plumage means a bird’s feathers collectively. Our Queen’s Plumage uses our lowest protein winter wheat to provide a finely milled flour with layered flavors, graceful mixing, baking elegance, and a truly local natural identity.
Plumage is sometimes showy, sometimes soft but always yields tender, flaky pastries and velvety cakes with a delicate crumb and effortless handling—ideal for pies, tarts, biscuits, and any bake that calls for a light, melt-in-your-mouth texture.
